  • Herbs: Adding fresh herbs like cilantro or basil not only elevates the flavor but also brings a fragrant aroma. They add a vibrant touch, making your salad feel like a gourmet meal.

Fresh Ingredients for Maximum Flavor

Whole Grain Noodles: I always opt for whole grain noodles for their nutty flavor and added nutrition. They’re not just heartier but also help keep you full longer, making this salad a great option for lunch.

Crunchy veggies: The combination of bell peppers, cucumbers, and carrots adds a satisfying crunch and vibrant color to the salad. They’re also packed with vitamins to keep you energized throughout the afternoon.

Peanut Butter: This creamy ingredient is the star of the show! It not only adds richness to the dressing but also infuses an irresistible nutty flavor. Go for natural peanut butter for a healthier fat option.

Sesame Oil: Just a drizzle of this fragrant oil elevates the dressing from good to unforgettable. It’s a secret weapon that brings all the flavors together.

Fresh Herbs: A handful of fresh cilantro or parsley not only enhances the salad’s appearance but also adds a burst of freshness with every bite.

Tips for Making Perfect Noodle Salad with Sesame Peanut Dressing

Creating a flavorful noodle salad with sesame peanut dressing can transform your work lunch from mundane to delightful. Let’s explore how to make sure your salad is not only delicious but also visually appealing and satisfying.

Use Quality Noodles

Opt for fresh or high-quality dried noodles, such as rice noodles or soba. Cooking them just right—al dente—ensures they hold their shape and don’t become mushy when tossed with the dressing.

Embrace Fresh Vegetables

Enhancing your noodle salad with a rainbow of fresh vegetables not only adds flavor but also nutritional value. Think bell peppers, carrots, and cucumbers for crunch and visual appeal. Remember to cut them into thin strips for easy mixing and eating.

Perfect the Dressing

The sesame peanut dressing is the heart of this salad. Start with natural peanut butter for a richer taste, and balance it with soy sauce, a splash of rice vinegar, and sesame oil. Whisk until creamy, and taste for seasoning adjustments. A touch of honey can add sweetness if desired.

Assemble Thoughtfully

Layer your ingredients by starting with the noodles, then adding veggies and finally drizzling with dressing right before serving. This prevents sogginess, ensuring a fresh crunch in every bite.

By following these tips, your noodle salad with sesame peanut dressing will be not just a meal, but a wholesome experience that can brighten up any workday lunch!

  • Yield: 3 servings 1x
  • Category: Salad
  • Method: No-cook
  • Cuisine: Asian, Thai

Ingredients

Scale
  • 1/4 cup peanut butter, preferably smooth
  • 1 tbsp sesame oil, toasted
  • 1 tbsp canola oil
  • 2 tbsp soy sauce
  • 2 tbsp sweet chilli sauce
  • 1 tbsp sriracha
  • 2 tbsp lime juice
  • 1 garlic clove, minced
  • 2 to 4 tbsp water, if needed
  • 350g / 12 oz fresh egg noodles
  • 1.5 cups carrot, julienned
  • 2 cups beansprouts
  • 1.5 cups green beans, halved
  • 1.5 cups red bell pepper/capsicum, finely sliced
  • 3 green onion stems, finely sliced on the diagonal
  • 1 tbsp white sesame seeds, preferably toasted

Instructions

  1. Prepare noodles according to packet directions (most just require soaking in hot water). Drain, rinse and set aside to cool.
  2. Mix together dressing ingredients, using water only if needed to loosen so it can be tossed through salad. If you reduce Sriracha, might need to add smidge more lime.
  3. Steam or boil green beans until just cooked, tender but still crisp. Drain under running water to cool.
  4. Place salad ingredients in a big bowl, toss with dressing.
  5. Garnish with sesame seeds then serve at room temp. Keeps 4 days in the fridge.

Notes

  • Peanut Butter – commercial spread is what I use in this recipe, ie sweetened. If you use natural peanut butter, you’ll need to add about 2 tsp sugar and 1/4 tsp salt into the dressing.
  • Toasted Sesame Oil is dark brown and has a more intense sesame flavour, untoasted is yellow.
  • Soy Sauce – all-purpose or light soy. Don’t use dark soy or kecap manis, flavour is too intense.
  • Noodles – I use thin hokkien noodles because I like the slippery, slightly chewy texture in this noodle salad. But any noodles work fine here.
  • Other Vegetable options – anything that won’t go watery limp once dressed: Shredded Cabbage (white, green, red), Zucchini batons, Snow peas, thinly sliced raw broccoli, red onion, corn, Lightly blanched asparagus, snap peas, cauliflower. Avoid: lettuce, spinach, cucumber, tomato.
  • Adapted from a Nigella Lawson recipe.
  • Serves 3 as a meal, or 4 to 5 as a side.
