Ingredients:
1 lb kielbasa sausage, sliced into 1/4-inch rounds
5 medium potatoes, peeled and thinly sliced
1 small onion, finely diced
2 cups shredded cheddar cheese
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
2 tbsp butter, melted
1/4 tsp garlic powder
1/4 tsp paprika
Salt and pepper to taste
1/4 cup fresh parsley, chopped, optional
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick cooking spray.
Step 2: Prepare the Creamy Sauce
In a large bowl, combine the sour cream, cream of chicken soup, melted butter, garlic powder, paprika, salt, and pepper. Mix until smooth and well combined.
Step 3: Add the First Layer
Arrange half of the sliced potatoes evenly in the bottom of the baking dish. Add half of the sliced kielbasa and half of the diced onion.
Step 4: Add the Sauce and Cheese
Spread half of the sour cream mixture over the first layer. Sprinkle 1 cup of shredded cheddar cheese on top.
Step 5: Repeat the Layers
Add the remaining potatoes, kielbasa, and onion. Spread the remaining sour cream mixture over the top and finish with the remaining shredded cheddar cheese.
Step 6: Bake Covered
Cover the baking dish tightly with aluminum foil. Bake for 40 minutes.
Step 7: Bake Uncovered
Remove the foil and continue baking for 15–20 minutes, or until the potatoes are tender and the cheese is melted, bubbly, and golden brown.
Step 8: Garnish and Serve
Remove the casserole from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired and serve warm.
