Ingredients:
1 lb ground beef
1 small onion, diced
1 packet taco seasoning
1/2 cup water
1 cup salsa
1 cup sour cream
1 can nacho cheese soup or cheese dip, 10.5 oz
1 can black beans, drained and rinsed
1 can corn, drained
1 family-size bag nacho cheese Doritos, lightly crushed
2 cups shredded Mexican-blend cheese, divided
Chopped cilantro, optional
Diced tomatoes, optional
Sliced green onions, optional
Sliced avocado, optional
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease an 11×7-inch or 9×13-inch baking dish.
Step 2: Cook the Beef and Onion
In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and the onion is softened. Drain any excess grease.
Step 3: Season the Beef
Add the taco seasoning, water, and salsa to the skillet. Stir well and cook for about 5 minutes, until the mixture thickens.
Step 4: Make the Filling
Stir in the sour cream, nacho cheese soup or cheese dip, black beans, corn, and 1 cup of shredded cheese. Simmer for about 5 minutes, until hot and well combined.
Step 5: Add the First Dorito Layer
Lightly crush the Doritos. Spread about 1 1/2 cups of crushed Doritos across the bottom of the prepared baking dish.
Step 6: Build the Casserole
Spread half of the beef mixture over the Doritos. Add another layer of crushed Doritos, followed by the remaining beef mixture.
Step 7: Add the Final Toppings
Top with the remaining crushed Doritos and sprinkle the remaining 1 cup of shredded cheese evenly over the top.
Step 8: Bake Covered
Cover the dish with aluminum foil and bake for 15–20 minutes, until the casserole is hot and the cheese has melted.
Step 9: Bake Uncovered
Remove the foil and bake for another 5–10 minutes, until the cheese is bubbly and the Doritos are lightly toasted.
